I want to display latest 10 recent post on each category pages and show all post published in last subcategory.
I edit “Blog pages show at most” to 500 value to get all the post indexed by subcategory, but it affects also the category page: how can I limit the category to 10 recent post and show all posts without limit in last subcategory only?

Indeed, that setting will affect all the category pages. There is a plugin you could try that would allow control over each category page, I believe it was called Custom Post Limits. Give that a try if you wish.

Ok, the plugin works fine but it create pagination for each category.
So, how can I disable pagination on some categories pages?
I want to show only last 15-20 posts (as set into plugin) without pagination.

The pagination is normal, set a higher number of posts for the category you want if you don’t need pagination. The theme will show pagination in the category pages.
I believe that plugin allows you to customize the number of posts for each category page as you wanted but it cannot remove the pagination or show only last 20 posts as you want. Maybe there are other similar plugins that you could try.
