How can I change the word: Start by the word Cover. In the menu if you let me change it and I have put the Cover, but in the categories I see Home.

If you did it the same way and the word “Home” is still displayed in the breadcrumbs, then it could be a matter of caching.
Maybe a caching plugin or browser cache. Try to clear any cache installed, also force refresh the page you are checking in (should be Ctrl+Shift+R for most browsers).

Also please note, I am able to change the word ‘Home’ if i create a category template from the library through the settings, but I cannot change the word on other pages etc.

With a cloud template it will be possible in the template, yes. It could be that you use WPML, the theme panel translations will not be used in that case.
