I have tried changing it int the theme panel, but the changes just don’t show up.. Can you please guide?

It seems that you settings from pane are not saved, please check the max_input_vars value in system status section: http://screencast.com/t/V8MumQISR and make sure that it’s set above 2000. Contact your host provider and let him know about this if you can’t access php.ini file.

You have to clear the cache after you make a change on the category settings. Or disable the cache plugin, make the changes and enable it back.
I placed the cache reset image 1st, my mistake, it should be done after you change the category settings, the order is this:
