I have a mega menu with different categories. I want to create a subcategory of a category in my mega menu. That is:
I have a mega menu called sections, and within sections I have several categories: associations, diamonds, business, opinion… So, within opinion, I want to create four subcategories. How can I do this?

I believe you are referring to standard menu and not mega menu. If so, then create subcategories of a subcategory in menu section https://i.imgur.com/bZDiZPh.png
