I would like to create a page template called “Glossary Page” that is similar to existing pages but which does not contain the Author field. How do I do that, and then how do I apply that template to existing pages?

Normally, f you create a page, you can’t assign that page template to another page. You can save the elements/blocks https://i.imgur.com/BTdbQoM.png and use it for other pages, also, if you create a new template, depends on what type of template, posts/author/category. You can assign the template for a specific type.
Also, you can hide the author using the option on the blocks, edit the page and select the block you want to edit and in the tab called “Layout” you can hide the author => https://www.screencast.com/t/fjrVaQm5IX
