I’m using Newspaper here – http://przemysl-40.pl/ – really great theme however I need to minor changes in CSS I guess:
1) Is it easily possible to change width to 1200 px ?
2) How can I reduce margin/padding in the menu (please refer to the image)

No.
Unfortunately, our theme does not have any such an option that allows you to change the width of templates because it has not been designed to use dynamic width and if you try to do this, you can simply damage the theme layout.

2) The header style that you use shows a centered menu. The padding cannot be reduced as there is no padding. It is the number of menu items you have. It cannot place itself on the container when a centered menu is used. Please change to a header style 9 for example and then your menu will align itself to the left side of the container.
