Please notice that the Category could be made from your panel, like this -> http://screencast.com/t/hMF93yKZehF and then it will appear in the Theme panel ->Categories and from there you can customize it as you wish, like this -> http://screencast.com/t/Ii68OsTu.

Unfortunately, our theme has not been designed to use the Visual Composer to edit the category pages, sorry! Please notice that is not a simple task and require to make some adjustments through code in order to achieve as you wish and all of these processes requires custom work. So, if you are not aware of the steps which are needed to take in this regard, please consider hiring a freelancer/developer to help you because we cannot provide customization services at the moment, sorry!
As a hint, you can use the Visual Composer shortcodes to edit your category only if you are using the do_shortcode method in the category templates from the theme code, according to what type of category is used for your category page -> category template 1, 2,3,..etc -> http://screencast.com/t/mUE3Ch1p The shortcode you can prepare with the Visual Composer, using the classic mode, like this -> http://screencast.com/t/GEm1IJXHzN5 For more information about this method, please refer to this documentation here -> https://developer.wordpress.org/reference/functions/do_shortcode/
