Hello,
I cannot seem to figure out how to customize mobile submenu. I want to remove the background image and add a search button above the categories.

Unfortunately you cannot add a a search button there. The search is the one available in homepage.
In order to edit the background go to Theme Panel – Background – Mobile menu background: https://www.screencast.com/t/mhqmEftTU7
