In order for the plugin settings to apply, you need to implement the youtube videos through the plugin, not through the visual composer element. Simply follow the plugin instructions and if they do not work, it means the plugin could be conflicting with our theme in which case you need to find another one that works properly as not all plugins are compatible with premium themes. Unfortunately we cannot make any recommendations as we have not tested any youtube plugins.

So there is no way to modify the youtube player? Can consider that like a new feature to add in next versions, that will be more useful.
Unfortunately there are no extra options for the customization of the youtube video. You can try different implementations for it if you require extra options: https://en.support.wordpress.com/videos/youtube/ or use plugins to do it.
