I recently found that you can change the no thumb by using this example:

We uploaded a default thumb for each of the sizes in the folder as opposed to the grey one. It does not seem to have updated on the site and I am not sure why.
The old files are no longer there so if there is no thumb it should pull the new default but it’s not working.
Does anyone have any advice or run into anything similar?

Hello George,
Please try to clear your cache. If you have a caching plugin, it could be loading your thumbs from the cache.

If using Chrome you also need to fully clear browser cache as well. If your server runs mod_pagespeed you need to turn off MPS then serve new image until cache for MPS clears.

We tried several browser (and cleared them). The server is not running pagespeed, atm, it is running zend opcache but I have just restarted PHP so that would clear out. Nothing the replacement thumbnails are not there. So I guess my question is where should I drop in a default thumbnail for anything that has no thumbnail

I just tested this on my local installation and the files you referred to are indeed the ones used for ‘no thumb’. It worked on my end, i just simply edited the image and it showed up:
