Hi,
The new header manager allows you to have a separate menu on the sticky menu and the main menu. Please read this guide: https://tagdiv.com/newspaper-theme-customize-the-header-manager/
Also, you can have separate headers on separate pages so make sure you page uses the same header as the one set globally in your header section of the thee panel.

Hi.
I’ve tried all of the options in Header Manager and Appearance >> Menu. Still when we scroll down on any page, including the front page, a demo sticky menu appears. We can’t seem to find where it’s getting that from.

Hi,
I see what is happening. What you need to do is to edit that cloud header template in the composer. Then activate the sticky mode – http://prntscr.com/nfn7ty now you should see what the sticky menu displays and modify it as you want.
This way you can display totally different elements normal vs sticky. Let us know if you have more questions.

When I do that, it shows the demo menu instead of my main menu.

That is right, activate the sticky menu and customize what is displayed in this mode, in the header. Click on the elements and configure them – http://prntscr.com/ng59ci delete them and add new ones etc.
The sticky version for the header can be entirely different than the normal version if needed. So all there is needed is to activate the sticky mode and customize what is in it – https://tagdiv.com/newspaper-theme-customize-the-header-manager/
