I would like to set different headers depending on:
– logged in user role
– post taxonomy
the two headers are built with cloud template, have differents logos and menus
how can we achieve that?

Unfortunately, we have not such an option to achieve that for a logged in user or a custom post taxonomy.
For normal taxonomies like categories and tags you can achieve it by duplicate the header and assign it to the category or tag cloud template.
