Today on my iPhone I can’t see the mobile website.
On Android work well but on iPhone I’ve a different layout.
Why this?

Here is how is look on iPhone X -> https://i.imgur.com/3UWw1W7.png I think that was something temporary, maybe some cache -> https://i.imgur.com/prM1Bqp.png
I think that the problem that you can say is that you are using the mobile theme plugin, and this is displaying on some devices, if is so, please clear all caches you have and purge CDN (if you are using), after that the layout should be the same for all devices.
