Can you point in the place to find the directions to setup and add Mailchimp so I can collect the email addresses for a newsletter?

Our theme has only that element to add the newsletter that you find in the documentation.
If you want to use another newsletter you can try to set the code in column text or text with title => https://www.screencast.com/t/N6rPZvAa The shortcode/code is automatically saved.
