I previuosly had the Tech News demo and was able to EXCLUDE articles from displaying in the Latest Articles. Is this possible in the Travel Blog demo?

Regardless of demo, the Latest articles section has filtering and sorting options

So you can configure this section as to include/exclude categories as you want, there are options for that and there should be no problem.
