I recommend you to use a cloud template, so then will be easy to customize more the template style.

You can use cloud templates for pages, categories, also for posts, or for example you can choose to use cloud template just for one page.

I guess I am pretty lost here. If I want to add a caption to a featured image, I can’t use any of the 10 built-in single post templates?

Try to use the style default, 1 , 2 , 9, 10, 11 or 13 for post template. It should work on these style templates.
