How can add Excerpt in block?

Not all modules have excerpts included. The smaller ones usually do not have them because of layout issues. There was no space to squeeze a small excerpt and still have the block look good so it was not added to the module to begin with. If you want excerpts on all blocks, choose the ones that come with excerpts by default as there is no option to add excerpts to the modules that do not have them except by altering the php code.

From theme panel excerpt settings you can customize the excerpt length for modules that display it, not enable it for modules that do not show an excerpt.

The modules can be modified through a child theme, they are supported

Also they are highly customizable in terms of layout and style, so you could make a flex block look in many ways.
