We need two types of profile pages, one for creators-bloggers, one for standart subscribers. Also I want user to be able to submit their full name, gender, username, and date of birth when signing up and through their profile page.
How can I create this feaures, which files I need to update/change?

If you want to set different profile pages, then you can use cloud templates, for the global users set a global author template and for the few users with different author page, set theme individual -> https://i.imgur.com/FD7p81r.png
I think that to make a custom signup form will be better to use an extra plugin, you can try some of those:
