How do I change the admin author to the actual author’s name for each post?

Hi,
In order to publish the name of author that write the post, he/she need to have an account on your website and have some privileges/role to can write articles, you can find more about those here in WordPress Roles and Capabilities -> https://codex.wordpress.org/Roles_and_Capabilities
