How do I change/remove column 'headers'?

On my Newsmag theme, there are several ‘categories’ that I want to remove completely or change. How do I do that? Examples are: ‘Food Matters,’ ‘Healthy Style,’ ‘Most Popular,’ ‘ Sport News,’ ‘Fitness,’…and so on.

You can remove/edit categories the normal way, in the categories screen
