After playing around with the template for an hour for my sports posts, I struggled to figure out how to do the entire customization process again for other posts. My goal is to have each of my five main categories have their own fully customized default layout. How do I achieve this?

I don’t quite understand what you are trying to do, some more details would be helpful.
Maybe you want to assign a cloud category template for each category, that is possible, create/import them as needed and set them in the theme panel, categories section. If you created one and width to create a similar one but with some modifications, the cloud templates can be duplicated – http://prntscr.com/ng4s2m
For posts the cloud templates can be applied in the single post edit screen, or in general in the theme panel, but not by category. Such an option may be added in the future, so that a post template can be applied for a posts belonging to a specific category.

I’ve added a 3 column row 25% 50% 25%, Row Stretch set to: “Stretch row and 1800px content”, Every slot is a separate Flex Grid 1, column gap set to: 2px, Small grids have bottom padding set to 0px.
