How do I delete the default Categories?

Hey there,
I’m using the Classic Blog template. I can’t find where to delete the default categories.
I want to delete the existing categories & create new ones the same way….

What kind of categories do you want to remove? Please provide some useful screenshots so I can identify them. All the categories can be removed from here -> https://www.screencast.com/t/dobIyo3YbC
