Hi: I’m using the demo “health and wellness” in “Newspaper” as my template for our site. At the bottom is a row of images and a link to Instagram. I am at a loss trying to either remove or modify it to our design. Could someone guide me on where that is located?

Check under Newspaper>Theme Panel>Instagram settings and make your changes there.
