How can I create custom editable text ‘block’ for posts – that I can use (several times if needed) inside the posts?

That can be done by using the WordPress standar editors.
TagDiv Composer is a page builder not a post builder. The options you have are the one from wordpress or you can have a 3rd party plugin but unfortunately we have not tested any and we cannot offer support for them.
