Is there a way to have Block 12 respect the “Read more” tag in posts. Right now it only allows us to display the excerpt at a fixed number of words, which is a readability and style issue for us.

If you want to display the excerpt at a fixed number of letters, you need to change it from Theme panel, from here -> https://www.screencast.com/t/U6bCss4n0xq If is not what you need, please provide more details about your problem so I will be able to provide a more accurate response.

What I want is the excerpt to show any amount of letters or words up to the <!–more–> tag. We want to be able to customize how much of each article in that block is shown.
If that can’t be done with that block, is there a way to make a block that just shows the text of the article until the <!–more–> tag?

Unfortunately, it is not possible with the theme, sorry! For better results, you need to use the general Excerpt functionality which is a default function which cut your excerpt by a word or letter to be the same for your module, sorry!
