I am wondering how I can change the the category for a new stand-alone page on my website. My current pages duplicate the title of the page as the category. How can I add my choice of category for each new page rather than this default duplication setting?
I can’t see where to select the category for the page.

You should assign a category to that article. Go to the Posts -> Quick edit and check a category for that article, update, clear cache, and recheck the breadcrumbs. Please note that you can not change breadcrumbs or assign a category to a simple page, only to an article. For the page, you can assign a parent page in Gutenberg and check the option from the shortcode Show parent page link. The guide is here: https://forum.tagdiv.com/breadcrumbs/

My mistake was creating a new page instead of a new article. So I will create an article and then assign it a category.
fyi, you can put ‘pages’ into pseudo categories, but that is usually for stuff like company info, services, etc.
e.g.,
page: printing services
sub=page: printing services > business cards
sub=page: printing services > posters
site/printing-services/
site/printing-services/business-cards/
site/printing-services/posters/
