If you upload an image that is little than your size from settings, then this could appear blurry and not high quality.

Image is 1200 × 787px, where are the settings how big will the image be on the posts?

If your image is in the content, then I think you need to check in Gutenberg editor. Also, when you add the image: https://www.screencast.com/t/Oxue274e
