Is there a reason why I can’t upload any images over 1020px wide and only Jpegs after the update?

Nothing to do with theme. Theme doesn’t control the media manager.
There is 2MB file size limit, but no limit on the image size, ad WP has it set by default. You might try changing the default sizes in the WP admin panel for media?
Also clear all caching, rest any CDN, etc.
