If I want to gain loading speed on mobile devices but maintain the formatting of my desktop version of the website do I simply install the AMP plug-in from the plug-ins menu and NOT the Mobile Theme plug-in? I’ve watched the tutorial videos but still not clear on whether both plug-ins need to be installed simultaneously, or if AMP will work as stand-alone plug-in.

Yes, Your aspect will remain the same. Simply install AMP and select AMP Only option. DO NOT SELECT AMP + MOBILE.
