I’m using the recommended plugins to have posts become AMP compatible but was wondering if there is a way to set exceptions by category vs. having to do each individual post?

If I understand correctly you are referring to an option to allow you to enable/disable the amp on posts in function of the category, unfortunately for the moment the only option is individual, maybe in the coming updates will be add some more options.

Yup, that’s what I meant. With being able to limit whether it affects the homepage, media links (if you have them), I was hoping there would be a category option but, alas, guess not.
