Right now all the post are ordered by “latest”. Where can I go and change so whenever I update any post it will stay on top of the list from that block?

I assume that you want to display in blocks last edited/updated posts. Unfortunately the theme does not have a filter which sort posts by modified date, sorry.
If this is not what you mean please provide more detail about what you’re trying to do so I can inspect it closer and get back to you with a more accurate answer.

I want to set the post globally sorting by modified date. So basically whenever someone edit the post it will jump on top of the list.

Currently the theme does not have such a filter and unfortunately I can’t provide a solution for the moment. However I’ve added this on our todo list and if more people will make similar requests we will consider it for implementation in future updates.
