I’d like to limit the width of this post to create a style more like medium.com or nos.nl – with maximum of 13-15 words per line.
How can I achieve this?

Ideally just the text btw – images/video can stay wide

Unfortunately, the theme does not have any such an option that allows you to do something like this, sorry! You need to use such a custom CSS code for example (padding-left and padding-right) to reduce the length of your post paragraph. Use the Inspector browser to create your own custom CSS code.
