Newspaper is great for Article and Video post formats, but is there a way to utilize the Link post format? Would like to do some entries that, when clicked from the homepage. simply link out to external sites.

Unfortunately our theme has no such feature. You will have to search for a plugin that can provide such functionality. Alternatively you copuld do some 301 redirects: http://www.wpbeginner.com/beginners-guide/beginners-guide-to-creating-redirects-in-wordpress/

I installed the “Page Links To” plugin and it works fine for this purpose.
