I’m using this theme in combination with the jetpack tiled gallery. Whenever I make a gallery the photos are displayed with low resolution until you click them.

How can I display a gallery with normal resolution and good quality images?

Unfortunately we have not tested any jetpack galleries so I cannot say for sure how they should work, but jetpack is known to compress images and reduce quality dramatically especially photon. Try to disable jetpack and create a standard gallery and see if the images are still low res without jetpack.
