Hello again,
I’m familiar with modifying / recompiling LESS files, and I was wondering if there was a simple modification I could make to generate new styles so that tablet users (on portrait orientation) would see the same styles as phone users? This way the tablet user doesn’t feel that the site isn’t mobile friendly.

Unfortunately it cannot be easily changed and i cannot provide a quick solution for this, sorry. My advice is to hire a professional developer to help you with this task, you can find one on places like http://studio.envato.com/
