Menu icons – how to make them appear / change them?

I am using the Craft demo theme and love the icons in the menu – i understand they are custom, but where are they stored / how can I insert my own custom icons?

Those are the only icons of the kind created specifically for that demo

You can display other icons in the menu, like font awesome icons
