Can you explain how the menus and categories work in the demo on sleepapneaworld DOT com
Fopr example the first one says

Where do I change the menu that says Don’t miss? And how did you put the other categories within Don’t Miss
A little lower you have a menu that says “House Design” with no categories in the menu. How did you make the menu House Design and how do I change the name and put categories in it?
Do I control the categories in regular wordpress or do I control the catgeories in the newspaper tab?

All the block titles can be changed according to your liking

Simply edit the page with the tagDiv composer and edit all the blocks you want.
The category menu you mention on top of the block is called the ajax filter. When enabled and set by categories, by default all the categories you have will be shown. However the categories that appear there can be controlled by entering specific category IDs
