I’d like to know how to modify the number and number of posts that show up in Mobile Theme.
For example:
I want to show only the last 5 posts and 3 specific categories.

Hello,
Sorry but the mobile theme does not have such settings. The homepage for the mobile theme is predefined and cannot be changed except by altering the theme code.
