So as I edit things around….on the side bar, there are two elements:
MOST POPULAR
then way lower
MUST READ
Currently it is using the demo’s posts.
How does it decide what is most popular or is that random category?
On the Must Read………It’s sort of like an Editor’s Pick.
Is there a way to pick specific posts from different categories? for both Most Popular/Must Read elements?

Please edit the page with TagDiv Composer plugin and you can find in that element a setting for sorting or filtering the posts from that element.
For example, you can include post and have some options here: https://www.screencast.com/t/tnF3mcNqgr :
1. Post ID filter => add posts by IDs
2. Category filter => choose a category from which to display posts
3. Multiple taxonomies filter => choose multiple categories from which to display posts
4. Filter by tag slug => add posts by category name
5. Multiple authors filter => specify ID authors from which to display posts
6. Post Type => specify post type, for example if you have custom posts
7. Sort order => you can choose in which order you want to display posts
