my posts that i post on the front page it seems to categorize them in 3 categorise

travel guides
and latest from Blog
i am happy to keep the last one latest from Blog, but how do i change the other 2 main menus so they display different categories?

Unfortunately you cannot divide a block in 3 separate sections and have each one show posts from a specific category. The theme blocks do not work like that. You can filter multiple categories in the blocks but you cannot add a specific category to a specific section.
