Is there documentation on how to use the Newsletter plugin to design a newsletter signup (with Mailchimp)?

Here is the guide for the plugin https://forum.tagdiv.com/the-newsletter-plugin/ . What you need is an embed form code from your MailChimp account to paste in the plugin field https://mailchimp.com/help/add-a-signup-form-to-your-website/.
