The category tag can be disabled for each theme module. You can see what modules that grid uses in this guide (module MX9 si MX10)

I don’t quite understand what you want to add to to the grid. If you mean a post excerpt that is not possible with a grid. Only blocks can display excerpts. It could be added but with some modifications only

A button in the header can be added , you would have to use a multi-purpose header style

No need to post the same thing in multiple topics. One will be sufficient. Grids do not display excerpts or subtitles, they display the post title only. Please see how all the grids look here

Glad it works, maybe in the future the grids will be modified to display additional meta besides the title, by default.
If you make the modification as shown, the subtitle will be displayed above the title. You can place the code differently in the module if that is what you want. If you want to modify the subtitle visually, you can do that with CSS
