In top page of Photography demo I have 5 random posts images.
I would have 3 static/fixed posts images, and 2 random post images but of only one determined category.
Can you help me? Thank you.

Unfortunately, the theme does not have any such an option that allows you to handle the thumbs of the big grids or blocks to display inside them more type of sorting, sorry! You should implement it yourself and if you are not aware of the steps which are needed to take in this case, please consider hiring a freelancer/developer to help you because we cannot provide custom work at the moment, sorry!

2. Can I set random but for one category only?
3. In slide there’s just an url, I didn’t see any option to insert manually pics. How slide option works?
I bought this theme because I’m new in wordpress and I read it can be customized without code, just drag and drop objects. Is it possible ask for a money refund?

1/2. That is a big grid element, this like any other block/grid elements has multiple filtering options, check them here

The filtering will apply to all modules of the grid, so having one setting for the first three modules and a different one for the other two is not possible. One way to have specific posts displayed in the grid at all times, would be to enter post IDs in the post ID filter.
The displayed posts can be controlled by category and also sorted, check the filter tab for each element.
