Whenever I try to use a post template or category template that uses a large featured image, all I get is a grey blank space. http://www.screencast.com/t/W8W1MtxB4jqi

Theme cannot enlarge images; you may need to use the “thumbnail upscale” plugin 🙂

Hi,
Please provide a link so we can take a look. Also if you use smaller featured image than the size of the thumb you will need to use plugin like Thumbnail Upscale to enlarge thumbnails and Force Regenerate, like Chris suggested.
