Do you have an option or know how to achieve that the yearly plans always end on the 31st of December regardless of when during the year a client subscribed? The price should be fixed regardless of when a new client subscribes .

There is not an option to set this date.
The subscribers need to have an account on WordPress. Only if you’ll find a plugin to transfer their accounts.
