I’ve made these changes, but there is still quite a bit of lag.

The theme can’t do nothing in this regard, these issues are related with server’s response time. You can try also with a default wp-theme and check how it goes but I amuse that the results will be almost similar as the requests trough admin-ajax are made by Visual Composer.
