How can i stop a user from changing poste template in the meta box when writing an article?
they should only be using single template but sometimes this get changes to from panel, default 1 etc.
Can I remove the other template from showing in the post settings meta?

If your users do not have admin or editor role, then will not have access to the settings from theme panel only for these from inside the article that they made.

Unfortunately there is no option for this, sorry! I’m not sure, but I think that you can use some functions to remove theme from inside of articles, unfortunately we do not have this function and need to be made custom.
