I terms of the license are confusing me a bit with the usage “end-user”.
Can I use the regular license I bought to setup a woocommerce type store to sell products still?

You can use a licence key for one single product, but if you want to move the Newspaper theme to another website, you’ll need to reset the licence key from that website http://prntscr.com/ouwxxd and remove the theme, in this way thy licence will be available for the new website.
According to Envato license terms a theme can be used for a single end product (website)

– https://themeforest.net/licenses/terms/regular
The licence can be use only for Newspaper theme, to set a woocommerce store, you need to use the woocomerce plugin, here is an example how it will look -> https://demo.tagdiv.com/newspaper_tech/shop/
