I am using the category template from gourmet pro and the category siblings are set to be styled in rainbow by default there.
It’s still set at rainbow but for some reason the category tags are showing in black colour.

For this you can choose whatever color you want there by accessing Newspaper -> Theme panel -> Categories. Search about your category open it and you will find a section called CATEGORY TAG COLOR ON POST PAGE. From here choose your color and save it. You can do that for each category.

This does not answer my question. My concern is that I have already the style as rainbow the tags still show in black colour where as there is no background color selected.

Unfortunately the rainbow setting will not work unless you follow the instructions that I mention in my first reply on this topic.

This should be working. Please look once again and check if you miss something or not.
You need to set this on: https://www.screencast.com/t/7UWrqSVhlCn9 and will appear in rainbow setting which means a color you choose in previous step like here: https://www.screencast.com/t/5Y4TqE2Fn0
If this problem is not solved after that, then we need to take a look and see what happened there.
