I’ve just installed the theme and and familiarizing myself with everything. After reading the doc files, I can’t find a way of displaying one of each category in the Big Grid.

So basically … I want the most recent of a collection of categories to show in the grid. How do I do that?
So if I have the Category Animals .. and sub catgories Cats, Dogs, Birds, and Fish. I want a grid of 4 … with the most recent post about each linking to a particular page.

You can filter posts in blocks by theirs category or by multiple categories. For example you can use a multiple category filter and set the display order by latest: http://screencast.com/t/NPlHsCNFQss2 This sort will display most recent articles from selected categories.
